Spice & All Things Nice: Dylan Debuts Christmas Cocktail Menu
Christmas never tasted so good as the Dylan, Dublin’s finest five-star boutique hotel launches Spice and All Things Nice, a limited-edition cocktail menu inspired by the most inviting spices of the festive season. Designed around five festive flavours – cinnamon, ginger, nutmeg, clove and star anise, this menu of eight irresistible cocktails launches in the luxurious surrounds of the Dylan on the 30th of November.
The carefully crafted cocktail menu has been created by the Dylan’s team of expert mixologists to evoke the heartwarming feeling of Christmas and inject a little warmth into the cold winter days. For more festive flavours, Afternoon Tea at the Dylan will now also be served with a subtle addition of the most appealing Christmas seasoning and spice.
Spice & All Things Nice Cocktail Menu:
‘Zenzero Negroni’ – A classic Italian cocktail with a seasonal twist. Enjoy the perfect blend of Gunpowder gin, Belsazar Red Vermouth and Aperol, accompanied by Domaine de Canton ginger liqueur, offering a unique spicy kick.
‘Festive Pudding’ – Reimagining the classic Christmas dessert, this cocktail made with Irish whiskey, homemade allspice Guinness syrup, freshly squeezed orange and lime juice, old fashioned bitters and egg whites is sure to quickly become your favourite festive tipple.
‘Winter Wine Warmer’ – Encompassing the true aroma of Christmas, this twist on the much-loved mulled wine is guaranteed to warm you up and lift your spirits, with a mix of homemade citrus, star anise and clove syrup, topped off with smooth Merlot.
‘Before Santa’s Here’ – Bring the ‘old fashioned’ into a new era with the Dylan’s modern twist on a classic whiskey cocktail. Connemara Irish peated whiskey is expertly paired with cherry syrup, homemade nutmeg and clove red wine syrup, along with angostura bitters to add an extra sprinkle of magic before old Saint Nick arrives.
‘Dylan Christmas Coffee’ – For the perfect festive pick me up, enjoy a decadent Irish style coffee with a secret addition. Dylan’s own Secret Spice Syrup is blended with Teeling Irish Whiskey and americano, generously topped with mouth-watering homemade vanilla cream.
‘Apple & Cinnamon Crumble’ – A staple in many homes over the Christmas season, this traditional dessert has been re-created with a mixture of Zubrowka Vodka, Goldschlager, apple juice, lime juice and vanilla infused honey, finished with a delicious cookie crumble rim.
‘Polar Express’ – An indulgent treat that can be enjoyed hot or cold. Made with Hennessey V.S., Baileys, Frangelico, chocolate and vanilla cream, this Christmas cocktail is perfect for those with a sweet-tooth to satisfy those chocolatey cravings.
‘Summer in December’ – Bacardi rum, lemon juice, lime juice and gingerbread syrup expertly blended together to create a refreshing summer inspired cocktail with a dash of Christmas cheer.

To further immerse yourself in the Christmas spirit, Dylan invites you to indulge in the Spice & All Things Nice Afternoon Tea menu. Sample a lavish array of carefully crafted sweet and savoury delicacies highlighting the spices of Christmas, starting with star anise spiced scotch egg with cucumber relish, turkey and sage pie with cranberry chutney and pulled ham on granary bread, accompanied by grain mustard, brie and cinnamon spiced apple.
A sweet and subtly spiced selection is up next up on the mouth-watering menu including buttery homemade scones served with nutmeg and vanilla clotted cream and ginger spiced orange marmalade. Then tantalise your taste buds with indulgent desserts such as a pistachio slice with lemon and ginger, a sumptuous gingerbread cupcake topped with whiskey icing, and a meringue snowman with chocolate and nutmeg mousse.
